Vegan breakfast meal ideas for weight loss



This quarantine has got people gaining weight and losing track of their goals. So I thought i share some inspiration on some of the helathy vegan melas I have been eating to lose weight here on my fitness journey. These recipes are gluten free, vegan, easy to make and require chesp ingredients so Im sure it will fit your budget.

Vegan banana oat blender pancakes

1 C rolled oats
1/2 C unsweetened plant milk
1 banana
1 TBS agave
1 TBS Apple cider vinegar
1 tsp vanilla
1 tsp cinnamon
Add all ingredients into blender let sit for 5-10 mins and place,1/4 C onto heated skillet with melted coconut oil. Cook on each side for about 2 min son medium heat or until golden brown.

Vegan breakfast burritos

Cook diced onions and peppers in skillet, seaosn with salt and pepper. Next add in half pack of soyrizo which is vegan chorizo or and vegan breakfast sausgae if you like. Let cook through then add in 1 pack of extra firn tofu season with salt, pepper, garlic powder, a little turmeric about 1/4 tsp just for color. add in a handful of spinach. Turn off heat and mix. Assemle onto tortilla of choice you can use gluten free tortilla wraps for a gf burrito.

Vegan blueberry oat bars

Preheat oven to 375. Add 16 oz or 1 pint of clean fresh or frozen blueberries to large sauce pan. Pour in 1/4 C agave add more sugar if you want it to be sweeter because these are not sweet. 1/8 tsp lemon juice, 1/8 C water Pinch of salt. Zest from one lemon.
Bring to boil, then add 1.2 tsp vanilla extract and 2 TBS corn starch. Turn flame to medium low and mix often to prevent burning until it thickens then remove from heat.

Oat mixture

Add 1 1/2 C rolled oat flour and 1 1/2 C rolled oats unblended. To make oat flour just take oats and mix in blender. 2 TBS coconut sugar, 1/2 tsp cinnamon, 1 1/2 tsp baking powder, 1/4 tsp sea salt, Mic, add in 1/3 C agave, 1/3 C unsweeteed apple sauce, 1/2 tsp vanilla mix then add in 2 TBS melted coconut oil mix with hands until combined. Wet hands with water so they dont stick to hands and take just a little more than half the dough and press into 8X8 inch pan. You want to use parchment paper or grease really well. Pour berry mixture on top then take the remaining dough and crumble it over the top or make flat disc shapes and place it on the top. Bake at 375 for 30 mins.
