Ingredients for Vegetable Masala Poha (serves 2):
Poha (Flattened Rice Flakes)- 1 cup (150g.)
Plain water (500ml) to soak the poha
Cooking oil or ghee- 2-3 Tbsp.
Mustard seeds- ¼ tsp
Cumin seeds (Jeera)- ½ tsp
Lentils(optional)- 1 tbsp Chana dal (split pigeon peas) and 1 tbsp Urad dal (black gram lentil)
(the lentils can be replaced with cashews and/or peanuts)
Ginger and garlic pastes – ½ tsp each
Sliced Onions- ¾ cup
Vegetables- ½ to ¾ cup chopped carrots, capsicum (green peppers) and green beans
Ground spices- ¼ tsp turmeric, ½ tsp each of red chilli powder (optional or as per taste), coriander powder and garam masala powder
Chopped tomatoes- ½ cup
Salt to taste
Lime juice – ½ to 1 tsp
Coriander leaves and roasted peanuts(optional) to garnish
